Simple Sushi

Today has been Simple Sushi Sunday in my house!

A few days ago I picked up this sushi making kit from my local supermarket and I decided that I would have a go at making some vegan maki rolls.

All you need to make sushi is some nori which is basically roasted seaweed sheets, some sushi rice and whatever fillings take your fancy. The rolling mat is also really useful for helping you to get your maki rolls nice and round. 

Considering that this was my first time making my own sushi, I think they turned out perfectly well!

 I decided to make cucumber and avocado maki as these are a favourite of mine when I eat out at Yo Sushi. I also decided to create something a little different with a sweet potato katsu maki roll as I had some sweet potatoes to use up along with some leftover Chinese curry sauce. I wasn't sure if these were going to work but they most definitely did and they were delicious! 

I love sushi! It's healthy, low calorie and extremely filling.
